The Santoku is basically the Japanese version of a chef's knife. The tall blade gives the hand enough clearance between handle and worktop and enables exact and forceful cutting.
Especially fine, repetitive cutting jobs like quick slicing of vegetables can be done very good with the Santoku knife.
